    Homemade Marzipan

    I make this every year around Christmas.

    Ingredients:
    • A box of almond paste
    • 1 1/1 to 2 cups of powdered sugar
    • A dash of vanilla extract
    • A dash of almond extract
    • 3 teaspoons of water
    I don't use whole almonds or egg whites, but some people do. Whole almonds would replace the almond paste. Egg whites would replace water. This is a no cook candy so not cooking egg whites unnerves me a little, LOL.

    Mix almond paste in a bowl until it's broken down in small chunks. Pour in your water and extracts. Then a cup of powdered sugar. Add more powdered sugar until the paste isn't sticky.

    I then take contents out and put it on parchment paper covered in powdered sugar and roll it into a log.

    It's best to put in an airtight container (Tupperware) and into the refrigerator.

    After about an hour, cut in slices and enjoy!
